Using the Shiboridashi is a mindful and immersive process. Measure the tea leaves and place them directly into the tea vessel. Pour 50°C, or 60°C, hot water over the leaves and cover with the lid to steep the tea. In just 90 seconds to 2 minutes, the tea is brewed to perfection. The lid, ingeniously designed as a strainer, ensures a smooth pour, holding back the leaves while the brewed tea flows into small cups or a pitcher. This process can be repeated multiple times with shorter steeping times to unlock the full spectrum of flavors from the tea leaves.
